Spanish Tarta De Santiago

Ingredients
6 eggs
255 g sugar
260 g almound flour
Zest from 1 lemon
Zest from 1 orange
1/2 teaspoon cinnamon
1/2 teaspoon almond extract
2 tablespoon confectioners' sugar
Directions
Step 1
Preheat oven to 170 C. Grease a 28-cm springform cake tin.
Step 2
Cream 180g of the sugar, zests and egg yolks together until light and fluffy. Next sur in the ground almonds, almond extract and the cinnamon.
Step 3
In separate bowl, beat the egg whites with the remaining sugar until stiff. Add about one-quarter of the egg whites into the thickalmond mixture and beat. Add a further quarter and repeat. Add the remaining egg white mixture and fold in until fully combined.
Step 4
Turn the mixture onto the prepared cake tin and bake in a preheated oven for 40 minutes.
Step 5
Once the cake is cooked, dust the cake with confectioners' sugar and serve straightaway.
