Mercimek Corbasi (Lentil Soup)

Cosy, convenient, joyful, welcoming (I remember having this soup during big family gatherings).

Ingredients

1.5 cups of lentils / 1 mid-size onion / 1 mid-size potato / 1 small or mid-size carrot / Chicken bouillon / 1 tsp seasoning powder.


For the sauce: 1 tsp tomato paste / ½ tsp red pepper powder / ½ tsp chilli red pepper powder / 1 cube butter /1 or 2 tsp olive oil 

Directions

Step 1

First wash the lentils in cold water until the water comes out clear.

Step 2

Cut all the vegetables in big pieces.

Step 3

Add all the vegetables, lentil, bouillon and seasoning into a pot and fill it with water.

Step 4

Boil everything until they are very soft.

Step 5

Lower to a medium heat.

Step 6

Blend everything until it is smooth.

Step 7

Add butter and olive oil into a small saucepan.

Step 8

Once butter is melted, add rest of the sauce ingredients.

Step 9

Cook it until the oil gets hot.

Step 10

Then add the sauce into the soup.

Step 11

Mix it well and keep it on the heat for another 2 minutes.

 

PS: You can add croutons as your topping and couple drops of a fresh lemon juice (Highly recommend!)
