Latkes (Hannukah Potato Pancakes)

What's better than a deep fried hash brown for dinner?

Ingredients
4-6 Medium Idaho Potatoes
1 Medium Onion
2 Tablespoons of Flour (or more as needed)
2 Large Eggs
1/4 Cup Olive Oil (or more as needed)
Salt and Pepper to taste
A pinch of Nutmeg
Applesauce and sour cream for serving
*A Carrot (for frying)
Directions
Step 1
Peel and grate your potatoes and onions. Transfer the peeled and grated potatoes and onions to a clean cloth and wring out as much liquid as possible.
Step 2
Take the drained potatoes and onions; and mix them with the flour, eggs, salt, pepper, and nutmeg until the mixture is well incorporated.
Step 3
Heat oil in a skillet over medium heat.
Step 4
Once oil is hot, take 1/3 cup of potato mixture per Latke. Make a patty/ pancake and place in the oil.
*Tip: Putting a chunk of a carrot helps to regulate the oil temperature and also helps to keep oil clean (and less likely to burn).
Step 5
Fry until the latke is brown and crisp on the bottom, then flip (2-3 minutes per side).
Note: If the latkes don't hold shape, add flour to the mixture.
Step 6
Finish frying the Latkes and add oil as needed.
Step 7
As you finish frying, put the Latkes on paper towels to drain excess oil. Sprinkle with salt to taste, if you'd like.
Serve Latkes with applesauce and/or sour cream.
