Holiday Cheeseless Lasagna

Our friends have an annual holiday tradition called Lasagna Day, but what if you don't like cheese?

Ingredients

1 1/2 pounds ground turkey
1 1/2 cups mushrooms, sliced
1 1/2 cups frozen bell pepper and onion mix, chopped
Salt, to taste
Powdered garlic, to taste
Onion powder, to taste
2 tablespoons spaghetti seasoning
9 pieces lasagna pasta shells
16 ounces Prego Traditional pasta sauce
1 tablespoon olive oil

Directions

Step 1

Preheat oven to 350°F. Cook lasagna noodles according to package and set aside.

Step 2

Warm a large skillet and add olive oil. Add in the vegetables and cook until soft. If you want to make the dish more kid-friendly, you can cut the vegetables into tiny pieces or even chop them in a food processor.

Step 3

In a separate skillet, cook the meat until brown.

Step 4

Transfer the soft vegetables to the meat, and then mix them together. Pour in two cups of pasta sauce, along with the spaghetti seasoning. Continue to mix. Sprinkle in salt, onion powder, and garlic powder to taste.

Step 5

Once the meat and veggie mix is ready, set it aside. In a 9x9-inch pan, spread pasta sauce to the bottom, add 3 pasta noodles, and then add meat mixture on top. Continue this process for two more layers, adding sauce, then meat, and then pasta noodles. The very top layer should be your pasta noodles, and then top this off with pasta sauce.

Step 6

Cook lasagna for 20 minutes.
